INGREDIENTS:
- 1 Flatbread, baked
- Handful fresh Spinach
- Few leaves Basil
- 5-6 Cherry Tomatoes
- 1 tbsp Balsamic Vinegar Glaze
- Protein Vegan Mozza
VEGAN MOZZA:
- 1 c Cashews, soaked overnight
- ¼ c Coconut Yogurt
- ½ c Almond Milk
- 2 tbsp Lemon Juice
- 3 tbsp Tapioca Starch
- ¼ tsp Garlic Powder
- 2 tbsp Nutritional Yeast
- ½ tsp Salt
- 1 scoop PROFI Booster
STEPS:
- Add all ingredients to a blender and blend on high for 3 minutes or until perfectly creamy
- Add to a saucepan on medium heat and whisk for 4-5 minutes or until the cheese comes together and loosens from the sides of the pot
- With a wooden spoon continue to stir the cheese on low heat for another minute or two, until it thickens
- Transfer the cheese to a heatproof bowl and allow to cool to room temp
- Cover and store in the fridge for an hour to firm up
- Add ingredients to your toasted flatbread to your liking, top off with the vegan protein mozzarella, a drizzle of balsamic glaze and enjoy!
