INGREDIENTS:
SOUP:
- 9-10 Carrots, roasted
- 1 White Onion, halved
- 5 Garlic Cloves, whole
- 3cup Veg Stock
- 1 scoop PROFI Booster Protein
- 1 cup Coconut Yogurt
- 2 tsp Curry Powder
- 1 tbsp Lemon Juice
- ½ tsp Salt
- ¼ tsp Black Pepper
- 1 tbsp Olive Oil
WALNUT CRUMBLE:
- ½ cup Walnuts
- 1 tbsp Parsley
- 1 clove Garlic, minced
- ½ tsp Salt
- ¼ tsp Black Pepper
- ¼ tsp Cumin
- 1 tsp Coconut Oil
- ¼ tsp Brown Sugar
STEPS:
- Preheat oven to 425F, roast carrots, garlic (whole), and onions (halved) all tossed in olive oil for 20 minutes
- Add all soup ingredients to a blender, and blend on high speed for 5 minutes
- Transfer to a saucepan and heat over medium heat until warm
- Pulse walnuts in a food processor or blender until a crumble consistency
- Add walnuts, garlic, sugar, and coconut oil to a pan
- Heat over medium-low heat until fragrant
- Mix in other crumble ingredients and serve hot over the curried carrot soup
