Family Meal| Nutritious

Makes 4 servings

Ingredients:

Taco:

  • 1 tbsp Avocado Oil
  • 1 cup Kale, finely chopped
  • 4 large Portobello Mushroom, thickly sliced
  • 6 tbsp Balsamic Vinegar
  • Juice of ½ Lime
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • Salt and Pepper to taste
  • 8 Flour Tortilla, warmed up
  • Garnish: Pickled Red Onions, Cilantro, Lime Juice

Guacamole:

  • 2 Avocado, pitted
  • 1 scoop PROFI Protein Booster
  • Juice of 2 Limes
  • ½ Medium Onion, diced
  • ¼ cup Cilantro, chopped
  • Salt and Pepper to taste
Directions:

Guacamole:

  1. In a bowl, scoop out avocados.
  2. Using a fork, mash the avocados until smooth.
  3. Add in the PROFI Protein Booster, onion, lime juice, cilantro, salt and pepper.
  4. Mash and serve!

Tacos:

  1. In a bowl, add kale, lime juice, and a pinch of salt and pepper. Use your hands and massage until leaves are soft. Set aside.
  2. Heat a saucepan on medium high heat. Add oil. Once hot, add the mushroom slices and cook for 8 minutes or until mushrooms are browning.
  3. Mix in garlic powder, onion powder, and a dash of salt. Cook for another 2 minutes.
  4. Add in balsamic vinegar. Stir to coat evenly and cook for another minute.
  5. Create taco with warm tortilla shell, mushrooms, kale, and guacamole. Garnish with pickled onions/cabbage, cilantro and lime juice.
